Vanilla, Date and Maple Bircher Muesli

Bircher Muesli is a delicious, convenient and fool-proof breakfast meal idea. If you’ve got a busy schedule and want extra time each morning to get a start on more important things, these Aussie-inspired overnight oats offer an on-the-go option filled with nothing but good-for-you ingredients. If you’re enjoying on a slightly slower Sunday morning, my advice is embellishing this dish with a couple other pantry staples to create one seriously elevated oatmeal.

Some of my favorite lashings include mixed berry compote, or fresh stewed fruit, chopped nuts and yoghurt.

Ingredients

3 cups Rolled oats

1.5 cup Apple juice, fresh

1.5 cup Green apple, grated (1.5 medium or 2 small apples)

2 cups. Greek yoghurt

1/2 cup Dates, chopped (5-6 dates)

1/2 cup. Golden raisins

1 tbsp. Maple syrup

1 tbsp Cinnamon, ground

1 tsp. Cardamom, ground

1 tsp. Vanilla paste (or 1/2 tsp of Vanilla extract)

1/2 Lemon, juiced

To Serve

2 tbsp. Mixed berry conserve

Orange zest

Maple syrup

Dried Rose Petal (optional)

Peanut Butter (optional)

Equipment

1. Large mixing bowl

2. Measuring cups

3. Box Grater OR Braun Multi-Quick Food Processor

4. Rubber Spatula

5. Paint Brush (optional)

How to make bircher muesli

  1. Combine rolled oats and grated green apple in a large mixing bowl

  2. In a separate bowl or measuring jug, mix together apple juice, cinnamon, cardamom, maple syrup and vaniila paste, whisk until dissolved.

  3. Peel green apples and grate using a coarse box grater or food processor such as our favorite Braun multi quick.

  4. Mix together spiced apple juice, grated apple, oats, dates and raisins until incorporated. Add greek yoghurt and fold through with a spatula until evenly distributed.

  5. Rest 8-12 hours (preferably overnight) to allow oats to absorb juice and yoghurt.

Finishing and Serving

  1. Using a wide paint brush, create a lush stroke of mixed berry jelly across the width of your bowl.

  2. With a ring mold, place a 1/2 cup of bircher muesli in the center of the plate. This is completely optional but a great way to present a fancy bircher muesli.

  3. Finish with a healthy drizzle of maple syrup and crushed dried rose petals. Brew yourself a coffee and put your feet up, you deserve it!
